Awesome Pecan Bars From Our Friend Bob Haering

Pecan Bar Drizzled in Orange Passion
Bob Haering, a Wax Orchards customer from Michigan, recently contacted us in an email praising Fruit Sweet. He had an inspiring message and an incredible offer of service.

Bob’s been using Fruit Sweet for the past two years as a professional baker. He is a pastry chef at an exclusive country club that offers a low-fat, low-sugar dessert menu. It seems the president of the club was concerned about his own refined sugar intake and so he asked Bob to develop healthier dessert choices for the club. Bob discovered Wax Orchards Fruit Sweet almost by accident when he sent an assistant  to purchase some kind of natural, refined sugar substitute. Bob was expecting something granulated. But the assistant returned with a golden jar of Fruit Sweet. Realizing Fruit Sweet is all natural fruit sugar in its simplest, non-granulated form Bob started creating low-fat, lower calorie desserts with it.

One popular delicacy that Bob converted to a healthier choice alternative was his Pecan Bars. He reduced 1 ½ cups of Fruit Sweet, ¼ cup of honey and 2 TBS Molasses (for color) into a delicious caramel that glues the pecans together. He uses this Fruit Sweet Carmel as a layer in all the bars he makes. Bob is quick to point out that he uses all natural ingredients because the artificial and highly processed sweeteners like Stevia, Splenda and NutraSweet are ultimately not as healthful as their makers would have us believe.

“You generally are amping up the fats and salts to cover the funky taste,” explains Bob. So while certain sweeteners proclaim they contain no calories, professional chefs like Bob must increase the overall amount of salt and fat in recipes to mask their unpleasant residual flavors. While this may decrease sugars, ultimately this does not make for a truly low calorie or healthier food.

“As far as using Fruit Sweet for weight loss, I can attest to that,” adds Bob.  “I have a horrible sweet-tooth. I would sample all the pastries that I made with refined sugars. I weighted 238 pounds. Now I only eat the sweets I that I use Fruit Sweet in.  I do not feel guilty eating [it].  I have lost 37 pounds since Jan 4th this year.”

When Bob said that we were amazed. But we were also a bit skeptical of such profound results. Certainly Bob must’ve quit drinking and started jogging and given up carbs and gone onto an all kale diet, right?

“No,” he says. ”I home-brew beer so there’s no way I’m giving that up. I’m 37 pounds lighter due to cutting refined sugar out of my diet.”

Bob wants to share his experience with everyone. Because he’s a pastry chef he is continually innovating recipes. Bob has generously offered to provide us with the very recipes that he is using at home to maintain a healthy weight using Fruit Sweet. Below is the first of his delicious recipes. Thanks for your submission Bob!

CHOCOLATE PECAN BARS

SHORTBREAD CRUST FOR BARS
12 oz (3 STICKS) Unsalted butter
1 cup Fruitsweet
3 eggs
2 tablespoons vanilla
4 ½ cups all purpose flour
1 teaspoon salt
1 ½ teaspoons baking powder

Yield:  ½ sheet pan or a cookie sheet for home use.

1.      Cream butter and Fruit Sweet.  Slowly drizzle the Fruit Sweet into the butter.  Take your time adding the Fruit Sweet.  The butter and Fruit Sweet must be combined thoroughly.   Add eggs one at a time, making sure each egg is fully incorporated before adding the next.
2.     Sift together the flour, salt and baking powder.  Slowly add flour mixture to the butter and eggs.
3.     Line the pan with parchment paper.   Pat in the dough, pressing the dough up the side of the pan.  Prick the dough with a fork.  Place in freezer for 20 minutes to let the dough relax.
4.     Bake at 350 degrees 20 minutes or till edges begin to brown.  Remove from oven and set aside while you prepare the pecan caramel.

PECAN CARAMEL
12 oz Unsalted butter
3 oz Honey
1 ½ cups Fruit Sweet
1 tablespoon molasses
4 cups pecan pieces
2 ½ oz heavy cream

1.     Place butter, honey, Fruit Sweet and molasses in a heavy-bottomed sauce pan.
2.     Bring to a boil.  Boil until firm ball stage (265 degrees on a candy thermometer)
3.     Remove from heat, add cream, (being careful, as the cream will cause the caramel to bubble up),  add pecans.
4.     Place another cookie sheet under the one containing the shortbread (double-panned).  This will prevent the crust from over-browning while it bakes.
5.     Fill with the pecan caramel
6.     Bake at 350 degrees until set and the edge of the caramel is bubbly; about 15 to 20 minutes.  Do not over-bake.
7.     When cool, drizzle with your favorite chocolate fudge sauce from Wax Orchards .

Luscious Lemon Curd!

Whisk constantly- Never leave your curd unattended!

With summer's heat on its way, we crave cool and refreshing foods that will curb the soaring 68 degree temperatures here in Seattle.  Try this easy as pie recipe for fantastic and fool proof lemon curd.

3 oz. (6 Tbs.) butter, softened at room temperature
2/3 cup Wax Orchard Fruit Sweet (reduce Fruit Sweet if using Meyer's Lemons)
3 large eggs
2 large egg yolks
2/3 cup fresh lemon juice
1 Tbl. grated lemon zest
small pinch salt

1.  In a large bowl, beat the butter and sugar with an electric mixer, about 2 min. Slowly add the eggs and yolks. Beat for 1 min. Mix in the lemon juice. The mixture will look curdled, but it will smooth out as it cooks.
2.  In a medium, heavy-based saucepan, cook the mixture over low heat until it looks smooth. (The curdled appearance disappears as the butter in the mixture melts.) Increase the heat to medium and cook, stirring constantly, until the mixture thickens, about 15 minutes. Don't let the mixture boil (or it may curdle).
3.  Remove the curd from the heat; stir in the lemon zest. Transfer the curd to a bowl. Press plastic wrap on the surface of the lemon curd to keep a skin from forming and chill the curd in the refrigerator. The curd will thicken further as it cools.

Yum!!  Enjoy!!

Losing and Maintaining Weight the Healthy Way

Spring break is here! Those of us who aren't stuck on the farm mending fences and feeding chickens might be heading off to some sunny, possibly exotic, locale.  Like Battle Creek. Of course, spring break signals the beginning of bikini season, that mortifying time when your mirror coldly reveals the reality that your big wooly sweater helped you ignore all winter.
Bathing Beauties from GlamourSurf.com
After plowing down a half dozen deviled eggs Easter Sunday, the first step will be to try and get back into some sort of normal shape. Many of us still think a crash diet is the way to do this.  With sacrifice and a soul-crushing diet of tasteless foods the pounds will melt away ...but let's face it.  Very few of us will be happy or satiated by a steady stream of rabbit food for the rest of our days. Or even the rest of the week.

Cheri Bianchini, founder of THE HEALTHY WAY in Santa Cruz, CA realized the cycle had to stop. As a nurse at Stanford Medical center she witnessed the consequences of unhealthy living every day so she developed real solutions for achieving long term results. She's pioneered a cutting-edge approach to permanent weight loss and a new-found vitality by focusing on basic truths and simple strategies.

The cornerstone of THE HEALTHY WAY philosophy is blood sugar stabilization. Cheri explains:

The foods we advocate are those low on the glycemic index (G.I.). These foods illicit a lower and slower blood glucose response. This helps to avoid the “roller coaster effect”—when blood sugar quickly rises, only to dramatically fall a short time later. The glycemic index of a food reflects how fast its carbohydrate content hits the bloodstream.
Foods with a low G.I. (50 or below), metabolize slowly, thus the amount of insulin released is less than eating foods with a high G.I. (70 and above), which release glucose more quickly into the bloodstream.

It has been scientifically proven that the secret to lifelong health is to keep your insulin level stable all day long by eating a low G.I. diet.

Blood sugar concentration can also determine how good or bad one feels. A stable blood sugar level keeps energy up, helps control hunger, and prevents mood swings. A low blood sugar level can cause irritability, fatigue, lethargy, excessive hunger, moodiness, and cravings for sweets—factors which can undermine success!

Cheri sums up her mission by adding, "our goal has been to assist our clients in stabilizing and balancing their individual body chemistry, as well as teaching life sustaining habits and achieving a positive body image. We believe whole nutrition and a healthy lifestyle are the basic fundamentals of preventative medicine."

Not surprisingly, Cheri recommends an assortment of low fat, beneficial type carbohydrate foods to her clients, including our delectable Wax Orchards Classic Fudge. Because foods like the juice concentrate found in all Wax Orchards products metabolize slower in the body, they won't create a spike in blood sugars and they'll sustain that satiated feeling you just won't get from celery alone.

Yummy Sugar Free Vegan Cupcakes by Faith

One of our customers has sent us a cupcake recipe that's to die for! Faith in Texas made these with a Valentine's Day theme but Iwe think they'd be delicious on any day. Here's her recipe from her blog at SugarFreeFoodie.Tumblr.com

Sugar-free and vegan, these moist and delicious chocolate-frosted banana cupcakes make a perfect Valentine’s Day treat.  We won’t wait an entire year to have these again!
Cupcake ingredients:
2/3 cup liquid fruit sweetener*       1/2 cup canola oil
4 tablespoons water
3 ripe bananas
2 cups whole wheat pastry flour
3 teaspoons Egg Replacer powder
1/4 teaspoon salt
Frosting:
1 jar Wax Orchards Oh Fudge! fruit-sweetened chocolate sauce
halved strawberries and Love toothpicks (optional)
Preheat over to 350 degrees.  Use a hand mixer to puree the bananas in a medium bowl.  Add the rest of the liquid ingredients and mix on medium speed until well combined.  Combine the flour, baking soda and salt in a larger bowl.  Add the wet ingredients to the dry ingredients and stir until just combined.  Spoon batter into cupcake pan (I fill until about 3/4 full and use paper liners).  Bake approximately 17 minutes or until cupcakes test done with a wooden toothpick.  Cool completely, frost with the fudge sauce and (optionally) add strawberries and decorations.
*My favorite fruit sweetener is Wax Orchards Fruit Sweet.  It’s a diabetic-friendly concentrated fruit juice blend with pear juice concentrate and unsweetened pineapple juice concentrate.

Happy New Year!!

The first winter storm of 2012 hit Seattle early last week and we're all still in a kerfuffle.

Please be patient if you're an e-commerce customer expecting an order by mail. With almost a foot of snow and ice accumulated over the past few days it's been tricky to get around.

However, the temps are warming and the slush is subsiding (slowly) so we should get back to the important business of providing fantastic Fudge Sauce and All Fruit Syrup by Monday!

All Fruit Syrup is Here!

High Mountain Blueberry
We had a late start to our summer in the Pacific Northwest which meant we were eating peaches in September! Crazy... But now that the harvest is finally in WAX ORCHARDS is pleased to announce TWO NEW ALL FRUIT  SYRUPS!

First, we have an incredibly thick and hearty Blueberry Syrup made from fresh Pacific Northwest blueberries. This all natural syrup has a robust blueberry flavor that's sweet and satisfying. The subtle nuance of blueberry lingers on the palate and its deliciousness builds and builds as you eat.

Many folks have never had real fruit syrups made with all fruit and not corn sweeteners or refined sugars. Lots of folks think syrup is supposed to be loaded with artificial colors and flavors. That stuff sure looks pretty in the bottle. But those jewel-tone syrups in their pretty packages go overboard with sugars and manufactured flavors. We think folks should try the real deal!

And the best way to start is Wax Orchards incredible Strawberry Syrup! We sourced fresh local strawberries from Western Washington for this supremely delicious syrup. The rich strawberry flavor is  enough to make any sad, old tire-patch pancake eat like a crispy golden hotcake right off the griddle! Like every Wax Orchards syrup, the strawberry syrup is only fruit sweetened with no thickening agents like pectin and no added sugars. This makes for an unusually intense yet subtle flavor profile.

The Strawberry Syrup and the Blueberry Syrup and our Northwest Marrionberry Syrup are all available now! Plus we've changed the bottle design to a slimmer, more contoured shape so all three can easily fit in your refrigerator after opening.

WAX ORCHARDS EASY VEGAN, SUGAR FREE CHOCOLATE PUDDING

It's Pudding Time! With healthful desserts on our minds, we've developed an extremely easy and delicious dairy-free pudding using only three ingredients. Here's the Easy Vegan Sugar Free Chocolate Pudding recipe:

1 Package Silken Tofu (drained)
1 Jar WAX ORCHARDS
 Fudge Fantasy or Oh Fudge!
1/4 cup very strong coffee

Blend all ingredients in till smooth and creamy. Divide mixture into (short) glasses and chill at least two hours. Garnish with berry, mint sprig, and/ or Cool Whip. Serves 4.

Although this recipe is rich and creamy, the pudding is still low in fat. How does it compare? We served our WAX ORCHARDS Easy Vegan Sugar Free Chocolate Pudding to some nice folks traveling from Anchorage to Roswell via Seattle. They were not tofu eaters by any stretch and we didn't tell them what was in it. Well, they loved it ...wanted more and left never realizing what they'd so enjoyed was a Vegan Sugar Free Chocolate Pudding!

In a distressing NY Times article the postmaster general warns that the US Postal Service is in such a dire situation that it may stop all deliveries by the beginning of next year!

While today's mail is seen as superfluous or even annoying in the form of junk mailings, it's hard to imagine a world with no mail.

The postmaster general has said congressional intervention is needed to save the Post Office from drowning in its own financial obligations and this, of course, opens the door for more posturing and high-handed rhetoric from the politicians.

We're not shocked by the news. The Post Office has been an insolvent institution for decades as is Amtrak and for that matter, almost every other government service including the IRS (debt crisis anyone?). But people seem to forget that government agencies are SUPPOSED to loose money. That's what government is designed to do: providing a public service for less money than a profitable business can provide while absorbing the loss for the greater good.

Commentators are quick to point out that email and electronic transactions have made the P.O. a vestige of a bygone era. However, we consider the news of an impending debacle to be devastating as the Postal Service is a vital part of our business. WAX ORCHARDS, like many of our small businesses allies uses flat rate shipping boxes from the PO like they're going out of style. And apparently they are.

However, we should recognize that this parcel delivery the US Postal Service provides is inexpensive, very effective and invaluable to e-commerce businesses. In a time when small businesses struggle to gain a foothold in the economy; when web 2.0, dependent on reduced shipping costs, is at last blooming into a viable business model and when there are countless alternative revenue streams open to the USPS, now is not the time to lead that pony out to pasture.

Fruit Sweet Nutrition Information

Our friend and resident sweetener expert, Ann Juttelstad has just published another interesting industry article on the growing popular demand for sugar-free bakery goods in this month's Baking Management Magazine

With the awareness of alternative sweeteners on the upswing, we're getting lots of inquiries about Fruit Sweet as of late. People are interested in its health benefits and how it compares to sugar or other alternative sweeteners.

Ann's article features the great work our good friends at Just Delicious Bakery and what they're doing to develop healthy, sugar-free baked goods using Fruit Sweet. Nanette Goin at Just Delicious explained to me why they prefer Fruit Sweet.

"It doesn't metabolize in the body like sugar --when it breaks down it won't cause a spike in blood sugar so it has a low glycemic index," she said.  Plus, she said, "Fruit Sweet is a humectant," which is a ten dollar word we use that means it keeps foods fresh and moist.

Although Fruit Sweet has a low glycemic index, it is not considered a low calorie sweetener. However, it does out perform traditional refined sugar, honey and even agave nectar. Fruit Sweet contains about 42 calories per tablespoon or 280 calories per 100 grams. Sugar contains about 48 calories per tablespoon or about 385 calories per 100 grams. Honey is considerably more calories than both sugar and Fruit Sweet at about 64 calories per tablespoon. Three Fat Chicks on a Diet informs us that the alternative sweetener agave nectar is in that same ballpark with around 60 calories per tablespoon.

Also, because Fruit Sweet is sweeter than honey and sugar, less is needed to achieve the same degree of sweetness. In general, the benefit of using an alternative sweetener such as Fruit Sweet is that a little goes a long was (like our Fudge!) Recipes calling for sugar can be modified using 2/3 of a cup of Fruit Sweet per cup of sugar. Other liquid ingredients should be reduced by 1/3 of the amount of Fruit Sweet used.

South of the Boarder

With summer in full swing we took a road trip from our HQ in Washington down to Oregon to see all our friends south of the boarder.

We started out in the morning at the Vashon Thriftway Espresso Bar where Cathy made us mochas using WAX ORCHARDS Classic Fudge! Yum! That lasted us for 15 or 20 minutes until we hit Tacoma for another mocha at the Antique Sandwich Company and lunch to go.

Then we hit the road for real and high-tailed it down I-5 to Clackamas for some suger free goodies at Just Delicious. Donna and Nannette gave us our muffins and went gaga over the gallon size of our Classic Fudge! That's right, folks. Even those of you playing at home can enjoy the gallon size of WAX ORCHARDS Classic Fudge or Oh, Fudge!

Next we rolled into Corvallis, home of the Beavers to buy some specialty coffee beans from Casey and our friends at the Oregon Coffee & Tea Company. They couldn't wait to try the Peppermint Stick Fudge in their fresh-berewed coffee.

Feeling only a little jittery we turned in for the night, eager to greet our next adventure!

Reduce, Reuse, Renew and SAVE!

It seems an especially turbulent time here on planet earth. Besides our own struggling economy in the US  -both large businesses and small still treading water to stay afloat- there's an unprecedented amount of unrest and revolution in the Middle East and Africa. The collage of images floating across our TV and computer screens can be inspiring and even awesome.

But at the same time the financial impacts have been severe

A prime example would be the situation in the Ivory Coast, a West African country that supplies the US with a full 50% of its cocoa, one-third of the world's totals. For years the government has delayed elections due to political unrest and violence. Voters ousted the strongman President Gbagbo at long last in 2009 but when he refused to acknowledge the election's winner it launched the country into yet another wave of civil unrest. In a final drastic measure to cut off income for the government, the country's exporters agreed to a self-imposed one month ban on cocoa exports that began last January and ended a few days ago in May..

The global impact of these events is predictable. Cocoa prices hit a 30 year high in 2009 and they spiked again when the export ban was announced. Since that time WAX ORCHARDS is paying double what we once payed for cocoa powder. Similarly, with the years of unrest in the Middle East and new conflicts roiling up every month, all of us have witnessed the steady increase in fuel prices. For WAX ORCHARDS that also means an increase in the costs we assume when we provide FREE SHIPPING on your orders of $28 or more.

How do we absorb these new, higher costs while keeping our retail prices the same all these years? Well, we'll never cost-cut our premium, high-quality ingredients!

What we can do is REDUCE the amount of packaging we use. We're streamlining the process, using less paper and buying less materials. We REUSE everything we can. Old boxes become packing materials, old bags are now trash can liners. And we've RENEWED our commitment to finding economical, sustainable practices.

Top 10 Dangers of Artificial Sweeteners

We love lists. That's why McSweeny's Internet Tendency's Lists page is bookmarked on the office computer. That's why we read the phone book recreationally. That's why we can't resist making obscure lists of our own like the Top 10 Forgotten R&B Hits of the Early 80 ‘s...

Midnight Star –No Parking On The Dance Floor
Ready for the World –Oh Sheila
Shalamar –Second Time Around
Shannon –Let the Music Play
Vanity 6 –Nasty Girl
Expose –Point of No Return
Lakeside –Fantastic Voyage
The Whispers –Rock Steady
Mary Jane Girls –In My House
Zapp –I Want To Be Your Man

But when it comes to health and healthful living there is no room for play. The web is full of information about the possible dangers of chemical sweeteners like aspartame and sucralose. There hasn't been a lot of hard evidence complied yet and that's the major criticism by the skeptics. They assert that these dangerous chemical compounds have been rubber stamped by the FDA and ramrodded into our food supply without the proper longitudinal studies required to determine the lasting effects. To be sure, it's terrifying to read what's in Splenda and scarier still think that millions of people consume it with little knowledge of it's carcinogenic ingredients... talk about a list!. That's why we've re-posted a distillation of the info that's out there in a list called the Top 10 Dangers of Artificial Sweeteners  which was gleaned from  the Nutra Legacy blog. Here's a copy of the post...

It is difficult but extremely important to curb your sugar cravings for improving your health. There is a huge misconception about artificial sweeteners. A lot of people think that by using these sweeteners they can not only satisfy their sweet tooth but also minimize the hazards of high intake of sugar. Unfortunately they are not aware of the dangers that they can suffer from the use of these harmful artificial sweeteners. The top ten dangers of these life threatening artificial sweeteners are given below:
Cancer:
According to the research, regular use of these artificial sweeteners can result in blood or brain cancer. This is considered one of the biggest risks of these sweeteners, so their consumption should be as limited as possible.
Depression, bipolar disorder and panic attacks:
The use of artificial sweeteners can create severe conditions of depression and panic attacks. Furthermore, it can also trigger bipolar disease. A person suffering from bipolar disease goes through extreme mood swings. Their immense levels of depression and elevation can only be controlled through medicine. Thus, to avoid such extreme discomfort, you should completely stop taking these artificial sweeteners or at least decrease their intake.
Persistent Headaches:
The consumption of fake sugar in foods and drinks can also lead to persistent headaches, which in some serious conditions can get worse and turn into migraines.
Weight Gain:
Many people think that artificial sweeteners make them lose weight. In fact, they are hugely mistaken, because these sweeteners not only don’t help them to lose weight but instead are actually one of the leading causes of obesity! It has been observed that people who use these sweeteners gain weight very rapidly. So, if you’re weight conscious, stay miles away from these sweeteners!
Allergic Reactions:
Artificial sweeteners can trigger allergic reactions too. These may include itchy or watery eyes, redness or swelling of the skin, rashes, sneezing, and stuffy or runny nose.
Birth Defects Or Infertility:
Studies show that the use of these harmful sweeteners has also led to infertility or birth defects in men. They contain such ingredients which slow down the male reproductive system.
Blurred Vision And Hearing Loss:
Most of these artificial sweeteners are very misleading. They tend to portray that there are no side effects of using them. However, they may also lead to blurred vision and hearing loss as they increase your blood sugar levels.
Alzheimer’sDisease:
Experts have proven that excessive use of artificial sweeteners can also result in Alzheimer’s disease. In other words, people who use ample amounts of artificial sweeteners can suffer from memory loss.
Cell Damage:
Along with many other dangers, artificial sweeteners are greatly damaging for cells as well. Therefore, their consumption should be very restricted.
Nervous System:
These are very damaging for the nervous system as well. Regular use can lead to nervous breakdowns, which can be fatal.

Say TIMBER to Hunger on the Trail

With spring in full swing and summer right around the corner we're
itching to get outside more. And a long day up on Cougar Mountain calls for a hearty snack... something easy to eat but loaded with nutrient-dense calories from whole food ingredients. Oh, and it needs to be yummy and chewey and good. Luckily, we've got just the thing!

Our friend Mary Goit makes her Belly Timber Bars with premium organic granola and WAX ORCHARDS concentrated fruit juice sweetener. Originally, she made the bars as a healthy snack for her kids because she was concerned about giving them processed snack foods. She based her recipe on the granola her own mother had baked for the family. But once the bar's nutritional anaysis came back, Mary soon realized she had much more than a children's afternnon snack.

The Belly Timber Bar is a must-have for skiers, hikers, backpackers and climbers because it's loaded with high-quality calories and it's resistance to temperature extremes. Adventurers love it because it will not melt when it's 90 degrees in Talkeetna and it will not freeze when the temops are below freezing on top of Denali.

We love it, too. because it's made with only premium ingredients by our good friend Mary.

A Matter of Taste -A Matter of Health

Around here, Sunday nights are for big dinners with friends and family. We sit around our big farmhouse table after dinner feeling full and happy as we laugh and share crazy stories. (We'll get to those later...)

But things always get very serious right around 8 pm. That's when dessert time rolls around. It's a big deal.

Sometimes its pie often its cupcakes or WAX ORCHARDS quick chocolate cake... yum! But last night we had a taste test. After some spring cleaning in the pantry, we'd unearthed half a box of Bakers unsweetened chocolate and so we put the venerable confection brand to the test against our humble CLASSIC FUDGE. We followed their directions for chocolate sauce on the Bakers box with scrupulous precision, adding mountains of white refined sugar and dairy to their 100% cocoa squares, slowly melting them together in a symphony of aromas. But as confectioners ourselves, we noticed there was something we use in our product that was a glaring omission in the Baker's recipe: natural vanilla extract!

[If you're as serious about dessert as we are around here then you've doubtless engaged with some well meaning but misguided naysayer in the chocolate v. vanilla debate. Vanilla proponents will always wield the culinary excuse that chocolate needs vanilla to be good but vanilla does not need chocolate to be delicious. Whatever. That may be true but chocolate is still better. End of story.]

So to level the playing field, we stirred in a teaspoon of pure vanilla extract to the very traditional sauce that was slowly heating on the stove top. The whole process took about twelve minutes and in the meantime we grabbed a few dollops of CLASSIC FUDGE and microwaved it on LOW in a glass bowl for 20 seconds. Then we cut cubes of angel food, strawberry, even pineapple!

At last it was time to taste test and to be sure, the Bakers chocolate sauce was delicious, warm and gooey. But it wasn't silky like our CLASSIC FUDGE and it lacked the decadently rich flavor that our cocoa delivers. WAX ORCHARDS wins hands down...and no, we're not as biased as you might think.

We know why our fudge tastes better. It's not simply because our handpicked blend of Dutch cocoas makes for a richer, denser flavor. It's not because we use only the finest, all natural vanilla. It's because we don't use sugar! Yes, our concentrated fruit juice sweetener, FRUIT SWEET makes everything richer, denser, more flavorful. Because it's half again as sweet as refined sugar, you use less of it. That allows for a higher percentage of the principal flavoring ingredients. And although the flavor of FRUIT SWEET is neutral, it acts as a catalyst releasing the robust flavors in other things, like antioxidant-rich Dutch cocoa.

So not only did the CLASSIC FUDGE outshine the traditional sauce in a matter of taste, it out performs it as a matter of health: sugar free, gluten free, vegan and full of natural fruit fiber.
